What is it and what does it do?
Alfalfa itself is a leguminous, perennial plant grown commonly as a ground cover
crop in arid regions of Africa. In Britain we generally only consume the sprouts, to
make use of the concentrated nutrients held within the seeds.
The main attribute of the alfalfa leaf is their Vitamin K content (20,000-40,000
i.u. per 100g). However, its nutritional benefits do not stop there. Also contained
in the foliage are Vitamins B6, D, E and U, along with beta carotene and also
several essential enzymes.
The primary function of Vitamin K is its role in the blood clotting mechanism and
it is therefore valuable for protecting against haemorrhage in some individuals.
Alfalfa is also valuable for relieving digestive upsets such as indigestion and overacidity.
It also helps to maintain healthy gut walls and acts as an appetite stimulant.
These gastric benefits are attributed to its Vitamin U content.
